About this product
Pickling cucumbers are a specific thing. They are not the same vegetable as a slicing cucumber and they should not be treated as one.
A pickling cucumber is picked small, when the skin is still thin and the flesh is dense all the way through with no hollow centre. The skin holds the brine without turning to mush. The crunch survives the jar. The size is consistent enough that your pickles come out uniform instead of a mix of spears and coins that brined at different rates.
Summerland Colony picks their pickling cucumbers at that small, firm stage, the exact window that produces a finished pickle worth opening. Grown in the colony garden near Carmangay in Vulcan County, Alberta, and available through Hutterite Marketplace while the harvest runs.hutteritemarketplace
Two Sizes, Two Uses
Per lb
For smaller batches and first-time picklers. A pound or two of colony pickling cucumbers is enough to put up a few jars of dill pickles, test a new recipe, or run a quick fridge pickle batch that is ready in 48 hours. The right entry point for buyers who want to pickle but are not ready to commit to a full canning day.
20 lb Bag
This is the serious pickling order. Twenty pounds of small, firm, colony-grown pickling cucumbers is a canning day. It fills a water bath canner multiple times over, stocks the cold room shelf with jars that will be opened in November and December when fresh produce is a memory, and justifies the investment in jars, lids, and dill that goes into a proper pickle operation.
For canners who put up pickles every year, this is the order to place. Colony pickling cucumbers at the right size, from the right garden, at the right price.
